    2006 Côte Bonneville Chardonnay

     Our 2006 Chardonnay is replete with Meyer lemon, tropical fruit, bright acidity, oak nuances, lovely integration and length of finish.  This stunning edition pairs beautifully with Lemon And Pepper Grilled Halibut, Cod With Mediterranean Salsa, or Tropical Chicken Salad, ending with The Ultimate Lemon Butter Bar.

     The wine was vinified using traditional Burgundian techniques, aged on the lees for 17 months in French oak, then bottled, unfined and unfiltered, on February 19, 2008.  Alcohol measured 14.2%, pH was 3.56, and titratable acidity was 0.63.  Only 162 cases were produced.

 

  2005 Côte Bonneville Carriage House

     The grapes in the 2005 Carriage House grew in a drought year, in which the vines themselves adapted.  Vine vigor was low, the berries contained more tannins and anthocyanins, and flavors shifted subtly.

     The 2005 Carriage House is very dark garnet in color.  Lush deep aromatics swirl with black cherry, plum, and a hint of bergamot.  Rich blueberry, boysenberry and cherry fill the mid-palate.  The long finish carries cocoa mixed with the fruit.  This wine is fascinating now, and will age well if laid down.

     The 2005 Carriage House compliments Mussaka (King’s Palace Hotel, Greece) or Tournedos au poivre, followed by Chocolate Orange Cheesecake.

     This wine is estate-grown Cabernet Sauvignon (73%), Merlot (26%) and Cabernet Franc (1%).  It was aged for 21 months in French oak cooperage.  We bottled the wine unfiltered on June 5, 2007.  Alcohol measured 13.3%, pH was 3.58, and titratable acidity was 0.61.  1050 cases were produced.

 

  2004 Côte Bonneville DuBrul Vineyard

     The 2004 Côte Bonneville represents the best expression of our DuBrul Vineyard, resulting from the unique events which shaped that vintage year.  In January 2004, an arctic blast struck Washington State, severely damaging many vines.  Our vineyard was spared.  Like many growers, we opened our vineyard to one-time buyers, so they would have fruit from that vintage.  We reduced our own crush in the process.

     The ’04 Côte is estate grown Cabernet Sauvignon (63%) and Merlot (37%).  The deep garnet color and exuberant aromatics lead to sweet plum, blackberry, bright cherry and cassis flavors which unfold into a long lingering finish.  This wine pairs well with sushi, king salmon, Moroccan lamb kabobs or Steak Diane, followed by a chocolate-cherry truffle tart.

     The wine was vinified in small lots, aged 24 months in new French oak barrels, then bottled, unfined and unfiltered, on August 29, 2006.  Alcohol measured 14.2%, pH was 3.48, titratable acidity was 0.61,  Actually 451 cases were produced.

 

  2005 Côte Bonneville Syrah

     The 2005 Côte Bonneville Syrah Yakima Valley DuBrul Vineyard is the clarion voice of our hillside vines.  Well structured with pure varietal character, the wine is true to its vineyard source and very long lived.

      Deep purple in color, with an exquisite perfume of cherries, white pepper, and spice, the wine’s purity of cherry, violets, berries and mineral coats the palate then slowly fades.  The wine compliments seared Ahi tuna or grilled pork tenderloin, followed by a Blueberry Gâteau.

     This Syrah was aged for 21 months in two year old French oak cooperage, then bottled on June 5, 2007.  Alcohol measured 14.1%, pH was 3.28, and titratable acidity was 0.74.  67 cases were produced.
